Cherokee Pie Casserole

1 tablespoon of  olive oil
1 pound of  ground beef
3/4 cup of chopped onion
1/8 teaspoon of thyme
1 bay leaf
1 can cream of mushroom soup
One 1 pound can of stewed tomatoes
1 cup of  instant rice, uncooked
Green olives and sliced cheese

Sauté onion in oil. Brown meat in sautéed onion. Add spices, soup, tomatoes and rice. Cook 3 minutes. Pour into 9 x 13 inch casserole. Cut cheese slices diagonally and place on top. Slice olives and place on top of cheese. Bake at 350ºF. until cheese melts and bubbles, about 30-40 minutes. LET STAND 10 MINUTES. Serve with salad and bread. Makes 6 servings.
