| Indian Peanut Dip
1 cup of smooth natural peanut butter 1/2 cup of onion, minced 1/4 cup of fresh lemon juice 1 tablespoon of soy sauce 1/2 teaspoon of garlic, minced (or 1/4 tsp. garlic powder) 1 teaspoon of ground coriander 1/4 cup of fresh parsley, minced Fresh broccoli florets Celery strips 1" long |

In a blender or food processor, combine first seven ingredients and blend about 1 minute or until well mixed. Serve the dip at room temperature with the broccoli and celery. Makes about 1 1/2 cups. |
