Baked Dijon Chicken

1/4 cup of Dijon style mustard
2 tablespoons of shallots, minced
1/4 teaspoon of tarragon leaves, crushed
1/8 teaspoon of Tabasco sauce
5 tablespoons of corn oil margarine, melted
1 cleaned broiler fryer chicken, cut up
3/4 cup of fine dry bread crumbs

Blend together the mustard, shallots, tarragon, Tabasco and 1 tablespoon of melted margarine in a small bowl. Spread the mixture over the chicken pieces, and coat with bred crumbs. Arrange the chicken pieces in a greased baking dish, drizzle the remaining melted margarine over chicken. Bake in a preheated 375ºF. oven for 1 hour or until done. Serves 4
