Bombay Chicken

One 2 1/2 to 3 pound ready to cook broiler fryer chicken, cut up
1/3 cup of all purpose flour
1 teaspoon of paprika
1/4 cup of butter
1 medium onion, thinly sliced
4 chicken bouillon cubes
3 1/2 cups of boiling water
1 cup of uncooked long grain rice
1/2 cup of raisins
1/2 cup of flaked coconut
1/4 cup of coarsely chopped peanuts
1 teaspoon of curry powder

Coat the chicken with mixture of flour, 1 teaspoon salt, dash of pepper, and paprika. In a skillet brown the chicken in butter, then remove. In skillet, cook the onion in remaining butter until tender but not brown. Dissolve the bouillon cubes in boiling water, add to the onions. Stir in the remaining ingredients. Turn the rice mixture into a 12 x 7 1/2 x 2 inch baking dish. Top with chicken. Bake covered at 350ºF. for about 1 1/4 hours or until the rice is cooked and the chicken is tender. Serves 4
