Easy Cornish Game Hens

Two 1 pound Cornish Game Hens
1/2 teaspoon of salt
1/4 teaspoon of pepper
6 tablespoons of butter
1/4 lemon juice
1/8 teaspoon of paprika

Sprinkle salt and pepper in each hen. Truss the hens. Bring the skin over neck opening and fasten to back with metal pick. Tie legs together with string. Bend wings under bird. Close the cavity with metal picks. Combine the 4 tablespoons of butter with lemon juice and paprika, stirring well to make basting sauce. Brown the hens in the remaining butter in medium skillet. Place the hens in a large roasting pan, without rack, brush with basting sauce. Roast in a preheated 450ºF. oven for 40 minutes or until tender. Garnish each hen with a crab apple.
