Preheat your oven to 375ºF. Season the Cornish hens well with salt and pepper, inside and out. Combine the remaining ingredients in bowl. Spoon 2 tablespoons of the mixture into each hen cavity. Tie the legs together and fold the wings back. Place the hens in a roasting pan. Brush each hen with the sauce. Roast for 55 minutes or until tender. Baste the hens twice during the cooking time with the sauce.
